Pancetta Bacon - Slabs
Our smoked molasses pancetta bacon is made from Duroc pork belly. It is cured with hard black molasses from Jiangmen, cold and hot smoked for three days, before being hung to dry cure for another week. The subtle flavours come through when sliced as is on a charcuterie plate or on top of a hot bowl of wonton noodles or fried asparagus. Pan frying or grilling the slices further brings out the meatiness that has defined the prized Duroc breed for so many generations.
Slabs of 450-550g
